Soft & Fluffy Yogurt Dhokla (Quick 5-Min Microwave Recipe)

A soft, spongy, gut-friendly dhokla made with besan (gram flour) and yogurt—light on the stomach, quick to prepare, and perfect when you want something savoury without feeling heavy afterwards.
Ingredients
Base batter
1.2 cups gram flour (besan) (~110 g)
1 cup yogurt (~240 g)
1 tbsp lemon juice (~15 ml)
1 tsp baking soda (~5 g)
1 tbsp olive oil (~15 ml)
Salt to taste
Tempering
1 tbsp ghee (~15 g)
Mustard seeds
Curry leaves
Green chilli
A pinch of lemon juice and a pinch of sugar
½ cup water (~120 ml, for a light syrup finish)
Optional: shredded coconut to sprinkle on top

Method
Mix besan, yogurt, salt, lemon juice, and olive oil into a smooth batter. Add a little water if it’s too thick—the consistency should be smooth, not too thick.
Let it rest for a few minutes.
Add baking soda just before cooking and mix gently until frothy.
Pour into a greased microwave-safe dish.
Microwave for 5 minutes or until spongy and cooked through.
Let it cool slightly and cut into pieces.
Tempering
Heat ghee and add mustard seeds, letting them crackle. Add curry leaves and green chilli. Then add lemon juice, a pinch of sugar, and water. Pour over the dhokla and garnish with shredded coconut.
