Soft & Fluffy Yogurt Dhokla (Quick 5-Min Microwave Recipe)

A soft, spongy, gut-friendly dhokla made with besan (gram flour) and yogurt—light on the stomach, quick to prepare, and perfect when you want something savoury without feeling heavy afterwards.


Ingredients


Base batter

  • 1.2 cups gram flour (besan) (~110 g)

  • 1 cup yogurt (~240 g)

  • 1 tbsp lemon juice (~15 ml)

  • 1 tsp baking soda (~5 g)

  • 1 tbsp olive oil (~15 ml)

  • Salt to taste


Tempering

  • 1 tbsp ghee (~15 g)

  • Mustard seeds

  • Curry leaves

  • Green chilli

  • A pinch of lemon juice and a pinch of sugar

  • ½ cup water (~120 ml, for a light syrup finish)

  • Optional: shredded coconut to sprinkle on top



Method


  • Mix besan, yogurt, salt, lemon juice, and olive oil into a smooth batter. Add a little water if it’s too thick—the consistency should be smooth, not too thick.

  • Let it rest for a few minutes.

  • Add baking soda just before cooking and mix gently until frothy.

  • Pour into a greased microwave-safe dish.

  • Microwave for 5 minutes or until spongy and cooked through.

  • Let it cool slightly and cut into pieces.


Tempering


Heat ghee and add mustard seeds, letting them crackle. Add curry leaves and green chilli. Then add lemon juice, a pinch of sugar, and water. Pour over the dhokla and garnish with shredded coconut.
