Smashed Eggs and Avocado sandwitch

A tasty and healthy sandwich for egg and avocado lovers :D


Ingredients: (1 serving)

  • 1/2 ripe avocado

  • 2 eggs

  • 1 tablespoon Greek Yogurt

  • Fresh bread (Sourdough or multi-grain or any other choice), sliced

  • Lettuce leaves,

  • Salt and pepper,  Lemon Juice, Cilantro to taste



Directions:

  1. Put 2 eggs in a saucepan and cover with cold water.

  2. Bring to a boil and cook for 3-4 minutes.

  3. Remove the saucepan from heat, tip out the hot water, and add cold water to cool the eggs.

  4. Once cool, peel the eggs and place them into a bowl with the avocado and yogurt and smash with a fork to the desired consistency (coarse or fine).

  5. Season well with salt, pepper, lemon juice and cilantro.

  6. Spread the egg and avocado mixture onto a slice of bread.

  7. Top with fresh lettuce leaves of your choice, and finish with another bread slice on top.

  8. Cut the sandwich in halves to serve.
